I think we all can agree this holiday season is much different than past years. You might not be entertaining like you are accustomed to and instead are opting for Zoom calls with family and friends or maybe sitting outside with a good six feet apart from one another. I find myself not needing to cook for a massive amount of people this year or attending any holiday parties that require a potluck dish. It definitely makes me sad, but I keep reminding myself one day we will be back to “normal,” right?
My Slow Cooker Honey-Glazed Carrots are my go-to, easy (mostly hands-free) recipe for potlucks or holiday dinners. Since potlucks might not be in our immediate future, I still figured I would share this side dish in case you want to simplify your holiday dinner.
Preparing this carrot side dish is extremely simple. Even the least talented cook can totally pull off this side dish and wow their friends and family. All you need to do is pour the baby carrots, along with a half cup of water, into a slow cooker. Next, cut the unsalted butter into small cubes and scatter the butter on top of the raw carrots. Then, drizzle honey on top of the butter and carrots.
I like to use a local Orange Blossom Honey that I find at our farmers market here in town. Lastly, all you have to do is place the slow cooker lid on top and cook on high for three hours. That is it! Once the carrots are done cooking, I like to sprinkle the dried (or fresh) dill on top of the carrots. Mix the carrots well and then drizzle with additional honey before serving. The best part is that you can actually eat them right away or keep the slow cooker on the “warm” setting and eat them when you’re ready to enjoy your holiday dinner.
If it’s just two or four of you and you don’t like or want to eat the leftovers, you can freeze the honey-glazed carrots, which will stay fresh in the freezer for up to three months. When you are ready to enjoy them again, just defrost the carrots when you are ready to eat. I like to reheat the carrots on the stovetop. I promise they are just as good as the first day you make them, so don’t get overwhelmed by the large quantity.

Ingredients
- 32 oz. bag of baby carrots
- 1/2 cup water
- 4 tablespoons unsalted butter
- 1/4 cup honey & additional for topping
- 1 teaspoon dried dill
Instructions
- Pour the baby carrots into a slow cooker. Pour a half-cup of water in the slow cooker. Cut butter into small cubes and scatter on top of carrots. Drizzle honey on top of carrots. Place the lid on top and cook on high for three hours.
- Once the carrots are done cooking, sprinkle the dill on top, mix well, and drizzle with additional honey before serving. Enjoy immediately or place the slow cooker on “warm” setting until ready to serve.
