
Building on its 2025 MICHELIN Guide recognition, Nami’s Culinary Director Freddy Money and Executive Chef Jason Beliveau debut an innovative lineup of dishes.
Nami at Lake Nona Wave Hotel, a MICHELIN-recommended restaurant in the 2025 MICHELIN Guide Florida, has unveiled a lineup of inventive new dishes, desserts and a seasonal bourbon cocktail. Nami’s Culinary Director Freddy Money and Executive Chef Jason Beliveau continue to elevate the restaurant’s modern Japanese vision with offerings that blend precise technique and global inspiration.
Nami’s latest additions bring a mix of vibrant crudos, standout share-style dishes and inventive desserts to the menu. Cured Salmon ($23) with crème fraîche and brioche croutons and the Madai ($24) with miso-lime and blue basil showcase the kitchen’s attention to detail, with the option to add caviar for a touch of luxury.
New highlights from the share-style menu include the Nami Wedge ($19), a creative riff on the classic, finished with smoked bacon and a tomato wafu dressing, and the Hokkaido Scallops ($32), paired with buttermilk and ginger for a bright, nuanced bite. Other additions include Lobster ($120) served with smoked chili, fried rice and jidori egg, and Yakitori Chicken Wings ($22) topped with Yuzu Kosho, Charred Scallion Aioli and glazed in a Tare made from the chicken’s own bones for a full-circle depth of flavor.

Desserts ($15) round out the experience with a comforting Koshihikari Rice Pudding topped with red berries and almonds and a vibrant Tropical Fruit Vacherin, featuring a trinity of tropical fruits in layered textures.
To complement the new dishes, Nami introduces its latest seasonal cocktail, the Harvest Old Fashioned ($24), made with Colonel E.H. Taylor Small Batch Bourbon, apple bitters, cardamom and a Luxardo cherry. The cocktail adds a rich, spiced note to the menu, reflecting the same precision and balance seen in the kitchen.
