Who says you have to go to a pub to indulge in pub food? You can enjoy pub food at home. Get ready for St. Patrick’s Day by making these sweet potato loaded Irish fries. Loaded fries make for a perfect after-school snack, before-dinner appetizer, or maybe just a quick weekend lunch.
My sweet potato loaded Irish fries are especially delicious around St. Patrick’s Day when the world revolves around corned beef for one day out of the year. I love corned beef, and I love a good loaded fry recipe. So when I merged the two together, it turned out to be a perfect foodie match!
You can use leftover corned beef from your St. Patrick’s Day dinner or stop by your local Publix deli and pick up 2 to 3 thick slices of corned beef (that’s what I used for this recipe). I also used fresh crinkle cut sweet potato fries. They can be found in the produce section; however, frozen sweet potato fries will work too—just follow the cooking instructions on the package if you go with the frozen variety.
